I tried the Tripa Tacos. Organ meats are always hit or miss. I don’t know the name of the man that cooked these, but he did an incredible job. It tasted like bacon. And the green sauce has an incredible flavor. By far the best tacos in castle rock. Can’t wait to try them again. Food: 5 Service: 5 Atmosphere: 5
