I visited Sweden from Chicago and this coffee shop has BY FAR the best pastries in all of Sweden. Everything homemade. The "Cardamom Knut" is the best tasting pastry I have ever eaten. The kanelbulle from this coffee shop is extremely tasty. I'm not sure how they roll the dough so thin but as you can see in the pics, the circles of dough are very thin and tight. Much more so than your typical kanelbulle. That means there are more crevices for butter/cinnamon/sugar/cardamom. If I could please get your recipe I would love you forever.
