One of the major epiphanies of my recent life has been realizing that Oviedo is no longer a small town, and that it is now a bustling metropolis. I came to that realization when I learned that Oviedo was getting a Jinya. There are only a couple of Jinyas in the major major cities, so getting one in Oviedo was a pleasant shock.
So after it opened, we gave it a couple of weeks, in order to get the kinks worked out. After those kinks came and gone, we showed up for lunch right and early one Saturday morning. We ordered a slew of things to try out.
JINYA Bun (Steamed bun stuffed with slow braised pork chashu, cucumber and baby mixed greens served with JINYA's original bun sauce and mayonnaise). Perfectly steamed bun, great portion of this super tender pork, hit with a pop of fresh crunch form the cucumber, and all tied together with the sauces. I loved this.
Takoyaki (Octopus balls. Battered octopus over egg tartar topped with mayonnaise, okonomiyaki sauce, fresh cut green onion and smoked bonito flakes). More places need takoyaki! Very tender octopus in this soft little fritter. Absolutely doused in sauce and covered with even more bonito flakes. Very fun, and very delicious.
Crispy Chicken 5pc (Juicy fried chicken thigh with an original garlic pepper served with mixed baby greens and JINYA’s original ponzu sauce). Excellent fried chicken. Very juicy, lovely thigh meat, seasoned to perfection, and that's before you dip them into the sweet tang of that ponzu sauce.
Pork Chashu Bowl (Slow braised pork chashu, simmered shiitake mushroom, kikurage namul, green onion, seasoned egg and sesame seeds). This was a fun little bowl. I love bowls like this, because they're so delicious, and the portion size is perfect. I could eat this thing and it just keep like an app, leaving me room for more.
JINYA Tonkotsu Black (pork broth: pork chashu, kikurage, green onion, nori dried seaweed, seasoned egg, garlic chips, garlic oil, fried onion and spicy sauce » served with thin noodles). The main event. The reason Jinya exists.
This broth was excellent. It was deep, complex, spotted with garlic oil. Very delicious. All the little toppings went a long way towards adding to the flavor of the dish and making every bite just a little different. Pork was plentiful and yummy. And that egg, was dynamite. Such a deep umami that smacks you right in the mouth, in a good way.
Overall, Jinya was amazing. Jinya is the exception to the rule that chains are not good. This is a chain that is very good, and I look forward to coming here many times over the time I live in Oviedo.

I’m big fan of Jinya since I had Jinya ramen in Denver three years ago.
Never regrets.Never disappointed.
All menus are good but my favorite is chicken broth based with thin noodles.👍🏼

Wonton Chicken Ramen
It is absolutely beautiful inside. Natasha is an A1 server, very fast and friendly and doesn’t even need to write orders down to get them spot on! Everyone has a great attitude, and food comes out very quickly and is fresh hot. Awesome place, you’re missing out if you don’t go here
