I went on a Monday for a birthday date. It was fewer people and very intimate. We enjoyed the food along with the price for it. Our server was excellent throughout the night making sure we had everything we needed. Every time my wife and I go here it is a great experience. The waiting staff are always kind and will get anything you need. The food is of higher quality and you can eat your full. This is the 3rd time I've eaten at CBS. The first 2 times were an awesome experience, the 3rd not so much!!! The service was slow, we waited sometimes up to 15 minutes between serving's and at the end of the night we were asked by a server, "Is there anything else you need from us" No, how was your meal......would you like coffee or dessert.....They needed the table and it was their way to kindle ask us to leave after presenting a $270 bill. Wonderful experience! Such great service, from making the reservation through the end of our meal. The side and salad bar had wonderful variety and was clean. Our Gaucho’s were all timely and personable. We enjoyed the beef choices the best. Would definitely recommend a Tuesday night to beat the crowds. It made our anniversary special - Thank you!

My 1st time dining at Cowboy but I've eaten at Rios & Chimas enough to be able to compare and review. While the atmosphere was pleasant, wait staff was friendly, salad bar was delightful, I wasn't impressed with the quantity of meat. It wasn't as plentiful as at the other Brazilian steakhouses I've visited. The wait time in between meat offerings was like 10 minutes. I specifically wanted the garlic steak. I told both the waiter and manager on duty when they came to check on our table. They both smiled and said, Oh it's coming. It's cooking right now. I didn't mind the wait because I was enjoying the salad bar items and chatting with my friend. Yet within 40 min I still had not received any garlic steak and both the waiter & manager had stopped at our table twice and I reminded them. We finally left and I had no garlic steak much to my disappointment. I'm not sure if this is a financial strategy to send out less meat so the customers can fill up on salad or what. However, $50 for salad and 2 small pieces of meat...and not the meat I specifically wanted...is not worth it. My mom wants to go for her birthday this Saturday night, and I'm willing to dine here again...just for her. I will try again and see if the experience is different. Update will follow. SO SO GOOD! We made a reservation online 45 minutes before we came and were sat down immediately. Steve was one of the Gauchos and was hilarious and so nice! Anytime we wanted a repeat item he went and got it for us immediately. Food was fantastic, the flank steak was the first item we had and it was super tender and flavorful so was the sirloin. Whenever we are in town again this will most definitely be a restaurant we come back to.
