Small place but this is the best in Hattiesburg. Perfect Poboys and Gumbo. Service is great. We were in Hattiesburg for 3 days, after eating at Art of Roux, we came back the second time and if in Hattiesburg again, will definitely eat here again. Don't skip this place, it's worth stopping and eating a wonderful Poboy and Gumbo. Fantastic find! My wife and I were in town from Georgia for vacation. We happened upon the Art of Roux because it was right down the street from our hotel. We were happy we did! The food was delicious! This place is not right downtown or directly on the main road, but if you are in Hattiesburg for any reason seek this place out - it is a hidden gem. GET OFF THE EXIT AND COME HERE!! You just leaving Nola and you need one last Cajun before you go back to home cooking land. The new location was clean and brightly lit. The parking lot is shared with the gas station, so it can be a bit cramped. As for food, I ordered the oyster poboy. It was filling, but the oysters were a tad too salty. The flavor of the oysters would be enough to give the seafood flavor without that extra salt in the batter. Aside from that, I enjoyed the meal itself. The sweet tea had a weird taste, so I'd recommend the fountain drinks instead. When it comes to price, the poboy meal is fairly reasonable compared to meals from places in the area, but buying sides on their own seemed expensive. 2 small cornbread muffins shouldn't come out to $6. That's as much as an entire box of cornmeal mix if not more. I would say for a business right by campus, it was a new adventure besides burgers or chicken, but it is a little underwhelming from the reviews. Update: some of my critiques have been removed due to the establishment making positive changes! It is a great option for poboys. Price per person $10–20
